Drink tea and bottled water. Carry a bottle of water around and when you’re in a restaurant, drink tea. It’s better with the food anyway.

Tap water is not safe to drink. Don’t eat or drink anything that you haven’t peeled or cooked. Nicer restaurants are safer in the sense that they probably wash plates with soap instead of just hosing them off on the sidewalk, but I wouldn’t drink a glass of ice water except in a very very few expensive international hotel chains in Beijing or Shanghai, and even then I would probably just order something that came in a bottle. When you go to tourist areas, you will see lots of vendors selling bottles of water. You will also see homeless people fishing empty water bottles out of garbage cans. Some of them fill them up with tap water and sell back to the tourists. Be smart and buy your bottled water from a grocery store before you head out. Before you go, ask your GP about vaccinations for hepatitis.
